Crispy Turkey Breakfast Hash
One of Dan's breakfasts on repeat. Ground turkey seasoned like breakfast sausage, crispy potatoes and peppers, eggs on top and a smoky herb sauce, all in one skillet. It keeps in the fridge up to 4 days, so it works for meal prep too.

Method
- 1
Par-cook the potatoes
Put the potatoes in a microwave-safe bowl with 1 tbsp of water and a pinch of salt. Cover loosely and microwave 4–5 minutes, until just tender. Drain and let them steam dry.
- 2
Season the turkey
Mix the turkey with the salt and all the seasonings. Don't overwork it.
- 3
Get a crust
Heat a large cast-iron skillet over medium-high. Add the oil and press the turkey into one thin, wide layer. Leave it alone for 3–4 minutes, until it's deeply browned underneath.
- 4
Finish the turkey
Flip it in big pieces and cook 2 more minutes. Break it into bite-size pieces and move it to a plate.
- 5
Crisp the potatoes
Add the potatoes to the same pan, with 1 tsp more oil if it looks dry. Spread them out and cook 8–10 minutes, turning only now and then, until golden and crisp.
- 6
Bring it together
Add the onion and pepper and cook 4–5 minutes. Add the turkey back with the greens and toss until they wilt. Taste and season.
- 7
Eggs
Make 4 wells and crack an egg into each. Cover and cook on medium-low 4–6 minutes, until the whites are set and the yolks are still runny.
- 8
Sauce and serve
Stir the sauce together and spoon it over the top. Add avocado and a squeeze of lemon if you like.
From Dan. Don't touch the turkey when it first hits the pan. That dark crust is what makes it.
Swaps. Mayo works in the sauce instead of yogurt, but it adds about 70 calories and 8 g fat a serving.
Storage. Make the hash ahead and keep it in the fridge up to 4 days. Cook the eggs fresh when you reheat it.
Macros per serving, calculated from USDA FoodData Central and product labels. Salt and spices aren't counted. Made with Greek yogurt in the sauce. Avocado not included.
